The simplest sugar is dextrose or glucose.

They get more complex.

Start forming into starches.

The starches get more complex.

When they reach a certain level of complexity, Two things can happen:

They can form into a disorganized mess which is fat and becomes a long-term storage of sugar.

Or, they can form into organized structures which use the stored energy.

Fat is 9 cal each.

Protein and carbs are 4 cal each.

Protein is also 9 cal, but it can’t release that energy while it is still structured.

That is my hypothesis. But is it true?

Yes! Jello!! Unstructured protein is fundamentally FAT but with strings instead of blob.
