For me, one of the better uses for n-valued logics is it allows for more discrete values in electronics other than two. Applications would be areas such as analog to digital, as analog is infinite, digital has discrete categories.

It can allow for faster math processing as there would be fewer steps, even if the electronics its processing through are more complicated.

How does it different from probabilities? Well, I suppose it’s like the differences between the various statistical probability methods and physics-inspired probability methods like local attractors (Lorenz) or self-organizing systems and such, sticky bits, or my favorite, the stuff of Wolfram with the little algorithms building themselves together, making the probability come from the inside moving out.

All of which are still maps but they can create some interesting territories tongue emoticon
