*PERFECT STEAK* – my words but its really just the way to do it – tradition
a) Take batteries out of smoke detectors, if any.
b) DRY cast iron skillet as hot as it gets. The redder the better*
c) salt on the bottom. Keeps it from sticking mostly.
d) 3-8 minutes, leaving it on ONE SIDE as _long as you can stand it_… because you’re gonna wanna flip it…. before flipping it.
e) sear the sides too for extra omg-how-did-you-do-that
f) stick a pat of butter on top at the end. Make sure it melts and gets in every nook and cranny.
g) serve it with a new pat of butter on top.
h) put smoke detector batteries back in.
* if you have flat glass top stove, don’t make it TOO red ’cause… CRAAAAAACK
