I’d skin the sweet pots, nuke them (faster), cut up, and put in my Ninja Kitchen with walnuts and molasses. the molasses should hold it together so I don’t need an egg, and will give the “oilness” so it shouldn’t need butter or oil. (pumpkin works as an oil substitute – so why not sweet potato?) — Cast Iron skillet, on hot with healthy high oleic safflower oil – viola. “
