Cooked celery (in soup or rice dishes) is a flavor I can’t classify. For me it stands alone as “celery”.

Most flavors I can classify somewhat but I can’t do that with celery.
Maybe it’s related to cilantro? Some people have a gene where cilantro tastes like soap
